Nakamura’s philosophy: minimise traditional dashi. Centre cooking on natural ingredient flavours and submarine groundwater. In a cuisine where dashi is non-negotiable, this is not rebellion — it’s a precise alternative that forces every ingredient to stand on its own umami.
In a week where we’re talking about stacking glutamate sources, Nakamura is the counterargument. Strip away the stock. Let the ingredient speak. The Michelin inspectors confirmed that both paths — amplification and revelation — lead to three stars.
The same guide honoured 97-year-old Kenjiro Kanemoto with the Mentor Chef Award — the world’s oldest active Michelin-recognised chef, cooking eel the same way in the same place for longer than most of us have been alive. Radical minimalism and absolute tradition, recognised in the same breath.
STCW Anti-Harassment Training Now Mandatory

Updated STCW Basic Safety Training now includes mandatory PSSR modules on violence and harassment at sea — sexual harassment, bullying, discriminatory behaviour, bystander responsibilities. The “continuum of harm” concept is codified for the first time in maritime training.
Every yacht chef completing or renewing STCW from January 2026 onward. Existing certificated crew are not required to retake, but the MCA strongly recommends company-provided refresher training.

If renewing STCW this year, the module is automatic. If you renewed before 2026, ask your management company about the updated training. If you’re a sole chef and your captain hasn’t mentioned this, raise it.
