Myojaku Earns Three Michelin Stars

Chef Hidetoshi Nakamura’s Myojaku — the only new three-star in the 2026 Tokyo guide. Opened 2022, first star 2023, top tier in under four years. Tokyo holds 160 starred restaurants total.

Nakamura’s philosophy: minimise traditional dashi. Centre cooking on natural ingredient flavours and submarine groundwater. In a cuisine where dashi is non-negotiable, this is not rebellion — it’s a precise alternative that forces every ingredient to stand on its own umami.

In a week where we’re talking about stacking glutamate sources, Nakamura is the counterargument. Strip away the stock. Let the ingredient speak. The Michelin inspectors confirmed that both paths — amplification and revelation — lead to three stars.

STCW Anti-Harassment Training Now Mandatory

Updated STCW Basic Safety Training now includes mandatory PSSR modules on violence and harassment at sea — sexual harassment, bullying, discriminatory behaviour, bystander responsibilities. The “continuum of harm” concept is codified for the first time in maritime training.

Every yacht chef completing or renewing STCW from January 2026 onward. Existing certificated crew are not required to retake, but the MCA strongly recommends company-provided refresher training.
